october food calendar

Oh, October, you're the best month. Of course, I'm a little biased because I was born in October, but I also love all things October: falling leaves, crisp-cool weather, pumpkin, baked goods, oversized sweaters, scarves, boots, anything to hide the baked goods we're over-consuming. October is always a little slower in our house. Friday nights are filled with football, and we end up having people over pretty often--because I'm cooking pretty often.

1st, Sunday, Leader Team Night: Baked Pumpkin Goat Cheese Alfredo with Bacon, salad, garlic bread, Hot Chocolate Pumpkin Cake
Aaron and I try to make homemade meals for leaders, especially in slower seasons. This meal sounds so fancy, when it's really just glorified mac and cheese and pumpkin bread in a bundt pan...which I don't have.

2nd, Marriage Monday: Roast Mac & Cheese in a Pumpkin, Roasted Brussels Sprouts with Hazelnuts, garlic bread, Chocolate Chai Snickerdoodles
I found the mac and cheese in a pumpkin recipe four years ago and have made it every year. I love the creaminess the pumpkin brings to the mac and cheese. This year, I'm putting roast in it because my Papa Bear did not fail--he brought lots of roast for my freezer! Also, I could eat every chocolate chai snickerdoodle ever created. So, if there are any leftovers, they will be accompanying me to the office.

3rd, Tuesday: Beef & Noodle Casserole, salad
This is an AaronMeal. Meat, cheese, starch. It's really easy to make, too, so I'll put it together the night before and let him pop it in the oven.

5th, Thursday: White Bean & Chicken Enchilada Soup
After all those noodles, I'll need a carb break. Thursdays are crazy, too, so putting this on the stove is an easy--and yummy--win. Plus, if it's not too cold outside (hello, SoCal Fall), we'll freeze any leftovers.

10th, Tuesday: Cheesy Bacon Spaghetti Squash, steamed broccoli
I've not yet perfected making spaghetti squash. I'm trying a new method this month, so we'll see if it's easy. Do you have any special ways you cook spaghetti squash that don't require you spraining your wrist to shove a knife through that thing? Maybe a little dramatic.

14th, Saturday: Pumpkin Pancakes with Cinnamon Apple Topping, Spinach Artichoke Dip
My beloved Sooners play Aaron's Longhorns, so we'll watch it with my Sooner cousin Magen and our Longhorn friends. Gotta make sure to have some breakfast food for pre-game and something more snacky by halftime. It's an art.

17th, Tuesday: One-Pot Meaty Spaghetti, canned green beans
This meal takes me right back to Stilwell, Oklahoma, where I spent the first twelve years of my life in the little pink house on the hill. We didn't have spaghetti often, but when we did, it was always accompanied by canned green beans. One time, mom made green beans from the garden, and we did not like them. I think that was the last time I can remember eating green beans from the garden--I remember the spankings I got for each green bean I didn't eat, too.

20th, Thursday: Steak, fried potatoes, Brussels Sprouts in Rosemary Cream Sauce
Friends in town means some of the steak my dad left for us! I'm sure we'll eat out a lot when Dustin and Kaitlyn are in town, so some homemade food will be a nice break.

24th, Tuesday: Roasted Pumpkin Nachos with steak
This will be the only night we're home before going to Oklahoma for a conference and my birthday. So, we'll keep it easy--plus, we didn't eat this meal last month, and I really wanna try it.

29th, Sunday: Pumpkin White Bean Soup, Anti-Vampire Potion, Tuscan Cauliflower Soup, Mexican Cabbage Roll Soup
My annual birthday pumpkin party will be this night at 5pm, so, as usual, I will have all the different types of soups! Bring a pumpkin and design; we'll provide the utensils and soup. And you can put in an order for pumpkin seeds--you leave 'em, I'll roast and season 'em!

We'll have a lot of leftovers that first week or two, but I plan to make the Steak & Brussels Sprouts Salad for one of the weeks!


I also plan to make Spiced Coffee, Roasted Chickpeas, Nuts & Seeds Trail Mix, and lots of roasted pumpkin seeds this month.

Some desserts that peak my attention are Dark Chocolate Pudding, Pumpkin Delight Magic Bars, Spiced Chocolate Truffles. I might be that coworker and make these to taste then take the rest to the office.
